Texas Diner & Pie Company is owned by Parker residents, Randy and Celia Waddle, who came
to Parker seven years by way of Texas. Randy is a trained chef who as a boy spent a lot of time
in his uncle’s restaurant in Greenville, Texas. This is where he learned that he loved cooking.
He loves cooking the southern food that his uncle cooked. He loves creating his own recipes
with fresh ingredients, and he loves serving food of the highest quality. That is why Texas Diner
& Pie Company menu varies from the popular Texas Chicken Fried Steak, to pizza, to “build your
own” burger, made with ½ pound of Angus beef. And on the lighter side Randy offers several
delicious salads with his own dressings and topped with grilled chicken. At breakfast you can
choose from a traditional southern breakfast, biscuits and gravy, or a green chili burrito. And
everything is homemade, all the way!
If you need a quick breakfast come in for a coffee, coffee drink (cappuccinos, lattes, mochas,
and iced coffee) and one of Celia’s homemade muffins. Celia is the baker. She bakes muffins,
cookies, and of course the PIES…
When Celia is asked what is her favorite pie to bake, she says coconut pie because it is her
mother’s recipe. Growing up eating this delicious pie, she wanted to bake a pie just like her
mom’s, a delicious crust, a sweet and creamy custard, and a beautiful meringue. Now Celia
has about 20 pies on the menu; traditional meringues, ice-box pies, southern pecan pies, and
flavorful fruit pies. And Celia doesn’t say no. If you don’t see your favorite PIE on the menu,

The best part of the day at Texas Diner & Pie Company is the “Pie Happy Hour”, daily from 3 pm
to 5 pm. During Pie Happy Hour a slice of pie is just $2.00 and a pie shake is just $2.50. What
is a pie shake? Well, there is always a slice of pie that is just not as pretty as the rest, and it is
used to make a pie shake. Texas Diner & Pie Company’s original pie shake begins with Blue Bell
ice cream, then milk, and finally, your choice of pie, All blended in a shake! Delicious!
